Exactly as the title says: do zombies HAVE to be mindless, brain-nomming monsters, or can they be half-rotted, reanimated corpses just as they were in life?

Well, I think that depends on how your story will go. There are many different incarnations of zombies. My perosnal favorite, which I find most frightening, is the mindless, brain munching, dead eyed kind that lope around with limbs falling off. Thriller style.
But the other kind can make for a very interestiing story. My advice is to go with whatever story you're trying to tell, and invent your own mythos for it. Because the latter you described has been seen around the before in ways, so it's probably very acceptable.

The beauty of fiction and of any of the fantasy, gothic, scifi genres is that we can reinvent the wheel. Your character can be whatever you need him to be. I agree with Daemora. You don't really have to play by anyone elses rules. In fact, it will probably be more interesting if you don't!
